Florida Orange Loaf

Last week I made banana chocolate chip muffins by my own recipe and they didn’t turn out the way I wanted them. Alex faked that he liked him and then left 4 more in the tub to throw away! They were much too dense and not as flavorful as I desired. I was stuck on it mentally and needed to redeem myself! I daydreamed about banana bread texture, but with another fruit. I chose citrus! I then wanted to add some color to an otherwise brown, boring loaf. So, I decided to naturally dye the powdered sugar with blood orange juice. I am so happy with the taste, texture and vibrant color! I called it a pound cake on Insta, but I take that back. It is too moist for that. It really is like a yummy orange cake loaf.. Alex ate 3 slices already today if that helps!

I N G R E D I E N T S

ORANGE CAKE

-1 3/4 cup flour

-1 1/2 tsp baking pow

-3/4 cup coconut palm sugar

-3/4 cup ghee/butter

-3/4 cup almond milk

-3 eggs

-1 large orange

GLAZE

1 blood orange

1/2 cup pow sugar

R E C I P E

O N E – Preheat oven to 350 + prepare your loaf pan. Feel free to use parchment paper or oil/flour method!

T W O – Sift flour into bowl 1.

T H R E E – Add baking powder to this bowl.

F O U R – In bowl 2, cream butter + coconut palm sugar! (I don’t have my mixer with me now. It is possible to do with a wooden spoon!)

F I V E – Add all 3 eggs to bowl 2 until combined.

S I X – Zest orange + add it to the bowl 2 mixture.

S E V E N – Squeeze the juice from this orange into the same bowl. (about 1/3 cup)

E I G H T – Fold in flour mixture + almond milk alternating between the two.

N I N E – Pour mixture into loaf pan + bake for 50 min. (Use a toothpick to be sure!)

T E N – Mix togther the juice of the blood orange and the powdered sugar to create a beautiful glaze without anything artificial! ENJOYYYYYY!!
