Creamy Butternut Squash Soup

I was hanging with a friend when her mom called and asked us to come pick up some soup she made. She wanted to hear what we thought because she loved it so much! I had one bite and immediately wanted to recreate it myself. She shared her ingredients with me + I put together the delicious soup. It's so good that I had to share it for you to enjoy! I N G R E D I E N T S

-1 butternut squash

-4 celery stalks

-1/2 white onion

-32 oz chicken broth

-1 pint whipping cream

-1 tsp cinnamon

-1 tsp salt

-1/2 tsp nutmeg

-1/2 tsp garlic powder

-1 tbsp olive oil

R E C I P E -preheat oven to 400.

-peel + cube + lightly season (s+p) squash, then toss it on a rimmed baking sheet to roast for 25 min.

-in a large pot/dutch oven, saute onion + chopped celery in olive oil over medium heat.

-add in squash + chicken broth.

-using an immersion blender, blend until smooth.

-add in cream, cinnamon, salt, nutmeg, and garlic powder.

-stir + simmer for 15 mins.
