Oatmeal Creme Pie Cookies

One of my all time favorite emotions is nostalgia. I made these Oatmeal Creme Pies because I crave the Little Debbie ones + wanted to make them at home without all of the additives/preservatives. They turned out well!

The recipe I'm sharing here is JUST for the cookies! I used AdLib Mom's homemade marshmallow fluff recipe for the filling.

It's light, fluffy and delish. If you're trying to stick to something that will taste similar to the boxed snack, I'd go more for a vanilla buttermilk frosting.

The cookies are so delicious that you could totally eat them on their own. (Guilty for this as they came out of the oven...) Enjoy!

I N G R E D I E N T S

(cookies)

-1 3/4 cup flour

-1 cup butter

-1 cup sugar

-1 cup oats

-2 eggs

-1 tsp vanilla

-2 tbs cocoa powder

-1 1/2 tsp cornstarch

-2 tsp molasses

-1 tsp cinnamon

-1/4 tsp ground ginger

-1 tsp baking powder

-1/2 tsp baking soda

-3/4 tsp salt

R E C I P E

O N E - Preheat oven to 350.

T W O - Mix butter, sugar + molasses with a handheld or stand mixer on medium-high until creamy.

T H R E E - Once combined, add in the eggs + vanilla.

F O U R - In a large bowl, combine all of the dry ingredients.

F I V E - Slowly incorporate the dry mixture into the wet mixture for about 3-5 min until the batter is fully incorporated.

S I X - Put it into the fridge for 20 min-2 hr.

S E V E N - Bake on a parchment lined sheet for 12 min.

E I G H T - Let them cool on the cookie sheet.
